JEWISH APPLE CAKE
3 cups flour
3 teaspoons baking powder
1 ½ cups sugar plus 5 tablespoons
4 large eggs
1 cup oil
2 ½ teaspoons vanilla extract
½ cup orange juice
5 apples, peeled, cored, and chopped
2 teaspoons cinnamon
1. Preheat oven 350°. Grease a 10-inch tube pan. Combine flour, baking
powder, and 1 ½ cups sugar in a mixing bowl. Add eggs and wet
ingredients. Mix until batter is smooth and free of lumps.
2. In a separate bowl, combine remaining sugar, apples and cinnamon.
Pour half of batter in pan and then layer with of apples. Repeat.
3. Bake for 60 minutes or until an inserted toothpick comes out clean.
Make this 2 days ahead of time. It gets more flavorful after few days.
