Retro recipes: Soda desserts

It's a blast from the past with these famous 1950s desserts: Try 7-Up cake, Root Beer floats and even Coca Cola roast.

7-UP Cake
This is an oldie but a goldie.

Ingredients
-1-1/2 cups (3 sticks) margarine
-3 cups sugar
-5 eggs
-3 cups flour
-1 tablespoon lemon extract
-1 tablespoon vanilla extract
-¾ cup 7-Up
-Powdered sugar for dusting

Directions
Preheat oven to 325 degrees.  Cream together margarine and sugar until fluffy.  Beat in eggs one at a time.  On a lower speed, add the flour and the extracts.  Gently fold in the 7-Up and flour into a greased 10-cup bundt pan.  Bake for 1-1/4 hours.  Cool for about 20 minutes in pan before turning out onto wire rack to finish cooling.  Dust with powdered sugar.

Root Beer Floats
Okay, this isn’t really “cooking” with soda but they are so good and so retro that I couldn’t resist!

Ingredients
-1 large bottle root beer
1 gallon vanilla ice cream
-Tall glasses and “spoon” straws

Directions
Pour ½ to 2/3 cup root beer into cup.  Add a scoop of ice cream.  Watch the foam rise, relax and enjoy!

Coca Cola Roast

Ingredients

-1 (5 pound) chuck roast
-2 tablespoons onion soup mix
-2 (12 ounce) cans Coca Cola

Directions
Preheat oven to 350 degrees.  Place meat in a roasting pan and sprinkle with the onion soup mix.  Pour soda over all and cover tightly with foil. Bake for about 4 hours. Let sit a few minutes before slicing.
