Orzo with roasted vegetables

A healthy, go-to side dish.

ORZO WITH ROASTED VEGETABLES
1 leek, thinly chopped
4 cloves of garlic, chopped fine
1 box of mushrooms, chopped fine
1 carrot, chopped fine
1 zucchini, chopped fine
3 tablespoons olive oil
Salt and pepper to taste
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon onion soup mix
2 teaspoons paprika
1 box of orzo pasta
4 tablespoons margarine

1. Spray a 9×13 pan with non-stick olive oil spray. Mix in all the vegetables and pour the 3 tablespoons olive oil over the vegetables.
2. Add the salt and pepper,mix put in oven and roast until nice and brown in a 350 degree oven for about an hour (mix a couple of times throughout the baking).
3. Remove from the oven and mix in the orzo (the uncooked orzo), all the remaining spices, margarine and water to cover. Return to the oven and bake for an hour.
