Orzo with roasted vegetables

A healthy, go-to side dish.

ORZO WITH ROASTED VEGETABLES
1 leek, thinly chopped4 cloves of garlic, chopped fine1 box of mushrooms, chopped fine1 carrot, chopped fine1 zucchini, chopped fine3 tablespoons olive oilSalt and pepper to taste1 teaspoon garlic powder1 teaspoon onion powder1 teaspoon onion soup mix2 teaspoons paprika1 box of orzo pasta4 tablespoons margarine
1. Spray a 9×13 pan with non-stick olive oil spray. Mix in all the vegetables and pour the 3 tablespoons olive oil over the vegetables.
2. Add the salt and pepper,mix put in oven and roast until nice and brown in a 350 degree oven for about an hour (mix a couple of times throughout the baking).
3. Remove from the oven and mix in the orzo (the uncooked orzo), all the remaining spices, margarine and water to cover. Return to the oven and bake for an hour.
