SWEET POTATO MUFFINS
Makes 1 dozen

1-1/2 cups flour
1 cup sugar
3 teaspoons baking powder
1/2 – 1 teaspoon ground ginger
1 teaspoon baking soda
2 eggs, lightly beaten
1 cup mashed sweet potatoes (can be canned)
¼ teaspoon cinnamon mixed with 1 tablespoon sugar


1. Preheat oven to 400 degrees. In a large bowl, mix together the flour, sugar, baking powder, ginger and baking soda.

2. Whisk together eggs and sweet potatoes and stir into dry ingredients just until moistened. Do not overmix. Fill greased or paper-lined muffin cups with the batter and sprinkle cinnamon-sugar mixture on top.

3. Bake for 18-22 minutes. Cook for 5 minutes in pan before removing to wire rack to finish cooling.
