Israelis are expected to consume twice as much fish than the norm while at the same time finishing off some 40 percent of the total annual honey consumption during the holiday season, according to estimates published by the Agriculture and Rural Development Ministry. During the month of Tishrei, which includes Rosh Hashana, Yom Kippur and Succot, Israelis will spend a total of some $100 million on fish as they polish off some 1.7 kilograms per person, on average, more-than-double the 800 grams typically consumed over a one-month period. Meanwhile, prices were expected to remain stable with those charged last year. Preferred fish among Israelis are tilipia, which are selling for a price of NIS 28 to NIS 30 per kg. and carp, which costs NIS 20 NIS to NIS 23 per kg. Last year, Israelis consumed a total of 70,000 tons of fish of which 27,000 tons were from local production and 43,000 tons, mainly frozen fish, were imported. Total annual per capita consumption of fish is 10 kilograms, according to the Ministry, well below figures seen internationally. In Mediterranean countries per person fish consumption is 20 kg to 40 kg a year while Japanese consumption per person amounts to 60 kg. Americans, however, actually, come in below Israelis, consuming just 6 kg to 7 kg of fish a year. As for honey, during the month of Tishrei, mainly over Rosh Hashana, Israelis consume 1,500 tons of the sticky stuff, generating NIS 40m. in revenue for the industry. The average Israeli consumes about 300 grams of honey during the holiday month. What kind of honey do we like? The found that the majority of Israelis preferred "regular" honey and that the real determination of which honey to buy was price. "A very small percentage of the population, about 20% of consumers, is differentiating and seeks honey according to flower species - for example, honey made of the nectar of citrus," said Haim Efrat at the Agriculture Ministry.
