With the sun shining outside, there's no need to spend all day in the kitchen; try this easy one-bowl chocolate cake.

Is it just because its summer time or are you also feeling like everything should be quick and easy in the kitchen? I want to enjoy the outdoors but still have some delicious dishes to serve family and friends. 
This cake is so easy and so moist that you will wonder why you should ever bother with anything more complicated. I usually just dust it with powdered sugar but you can glaze it with a mixture of 1 cup powdered sugar, 2 tablespoons cocoa, and enough milk, or soymilk to make it smooth. 
I make it in all shapes and sizes so just adjust your cooking time according to the pan size. It takes about 50 minutes for a 9 inch cake pan.

2 cups sugar1 ¾ cups flour¾ cups cocoa1 ½ teaspoons baking powder1 ½ teaspoons baking soda1 teaspoon salt2 teaspoons vanilla extract2 eggs1 cup milk, soymilk or non-dairy creamer½ cup canola or vegetable oil1 cup boiling water (add in bit by bit)
Preheat oven to 350F (180C).
In a large bowl, mix all the ingredients together except the boiling water.  Add the water in a small amount at a time and stir until blended. Do not overmix.
Grease a 9 inch cake pan or other desired pan.  Pour in batter and bake for about 50 minutes.  Cake is done when tester comes out with moist crumbs.  Sprinkle with powdered sugar or glaze (instructions above).
