Passover set, Ha'ahim
One of the most joyful collaborations of recent times – before the counting. That is, before the war – led to a real breakfast revolution at the Tel Aviv restaurant of the Ha'ahim Doktor brothers, led by pastry chef Tuli Naveh. Now, when such happy news is muted under the sounds of sirens-alerts, all that remains is to package the energy into a perfect holiday gift, even an exciting one. Yes, even cynics like us still get excited here, sometimes.
The Ha'ahim Passover basket (NIS 360) was created with the people of the country in mind, their guests and hosts, and aims to solve the gift issue of these days, or simply to indulge. Actually, why simply? Indulgence is a consumer product that should be basic here.
The story includes baking stars (gluten-free of course) such as vegan chickpea cracker, almond tuile, Himalaya coconut cookies and meringue kisses, as well as elevated chocolate highlights like soft fudge squares and a loaf cake that does an injustice to all holiday loaf cakes, and to their routine companions, truth be told. All of these, naturally and fittingly, will be washed down with a bottle of local white wine, the result of a collaboration between Ivy restaurant and Naama Sorkin. After all, cheers.
