CHICKEN CACCIATORE1. Season chicken with 2 teaspoons salt and ¼ teaspoon pepper. Dredge in flour.
8 chicken thighs, skin on (about 2 ¼ pounds)
Coarse salt and freshly ground pepper
1 cup all-purpose flour
¼ cup extra-virgin olive oil
2 medium onions, halved and cut into 1/8-inch thick slices
3 large garlic cloves finely chopped
2 teaspoons finely chopped fresh rosemary
¾ cup dry white wine
3 cans (14 ½ ounces each) diced tomatoes, juice from 1 can reserved
1 cup homemade or low-sodium store-bought chicken stock
2. Heat oil in a large Dutch oven over medium heat. Add half the
chicken, skin side down, cook until golden brown, about 4 minutes per
side. Transfer to a plate. Repeat with the rest of the chicken. Set

Reduce heat to medium, add wine and simmer 4 minutes.
