Coffee-flavored brisket

A variation on traditional brisket.

COFFEE-FLAVORED BRISKET

1 (5 pound) brisket or shoulder roast
1 tablespoon oil
2 onions, sliced
2 (8 ounce) packages sliced mushrooms
2 teaspoons minced garlic
3 cups brewed coffee (you can use instant in a pinch)
1 teaspoon chili powder
½ teaspoon pepper

Preheat oven to 350 degrees. In a large frying pan, brown meat on all sides and place in roasting pan. In the same pan, sauté the onions, mushrooms and garlic for about 5 minutes and then pour over the meat. sprinkle with spices, pour coffee over and cover. Cook for 4 to 5 hours. Remove from oven and let stand ½ hour before slicing. Reheats or freezes well.
