Israel Prize laureate Yehudith Birk passes away at age 87

Professor Yehudith Birk, a 1998 Israel Prize laureate for agricultural research, passed away on Monday, Israel Radio reported.
Birk, an internationally renowned biochemist, died at age 87. Her funeral will take place on Tuesday in Rehovot.
According to the Jewish Women's Archive, Birk's research had a revolutionary impact on the perception of foods like soya and hummus as important vegetarian sources of protein, which contain inhibitors of the growth of cancers.
