Cooking with JPost: Keep your veggies bright

Check out this awesome tip for keeping your veggies bright and colorful with Chef Yochanan Lambiase.
Things you will need:
  • 2 pots
  • carrots
  • Ice water
  • Knife

STEP ONE: Slice and dice

Slice the carrot at a 45 degree angle and after every slice, rotate the carrot 90 degrees. For all the foodies out there, this is called a rondelle cute.

STEP TWO: Slowly, but surely

Since carrots are a root vegetable, start them off in cold water, and slowly bring the water to a boil. let them cook for about 15 minutes.

STEP THREE: State of shock

Quickly remove the carrots from the bowling water and plunge them into a pot of ice cold water, in order to shock them.
