Who doesn’t want no-cook appetizers in the summer? Here are some dips that go great with vegetables or chips and can be eaten as snacks or to start the meal. Don’t make too much to follow; everyone is going to fill up on the dips!Guacamole California StyleThere are countless versions of this delicious dip. This is one of our favorites; look for just ripe avocadoes.2 avocadoes, peeled and chopped 2 tablespoons fresh lemon juice1 (4-ounce) can chopped roasted green chiles1 cup chopped tomato (about 2 tomatoes)4 tablespoons mayonnaise½ teaspoon granulated garlic ½ teaspoon Tabasco saucePurée avocado and lemon juice. Combine with remaining ingredients, cover and chill for 1 hour. Spicy Black Bean Dip1 (15-ounce) can black beans, drained2 tablespoons lime juice3 tablespoons olive oil1 chipotle pepper in adobo sauce½ teaspoon minced garlicCombine all ingredients in a food processor and purée. Can be served immediately or stored, covered, in the refrigerator.Lime Cilantro SalsaI think there are even more flavors of salsa than there are guacamole! I don’t mind the mango or peach or pineapple flavors but I really like the lime and cilantro combination.2 large ripe tomatoes, diced¼ cup minced red onion¼ cup finely chopped cilantro1 jalapeno, minced½ teaspoon minced garlic2 tablespoons lime juiceDash saltCombine all ingredients and serve immediately or store, covered, in the refrigerator.
