Delicious dips

Simple one-step dips are always the perfect starter; no hassle, but always delicious.

Who doesn’t want no-cook appetizers in the summer? Here are some dips that go great with vegetables or chips and can be eaten as snacks or to start the meal.  Don’t make too much to follow; everyone is going to fill up on the dips!
Guacamole California Style
There are countless versions of this delicious dip.  This is one of our favorites; look for just ripe avocadoes.
2 avocadoes, peeled and chopped
2 tablespoons fresh lemon juice
1 (4-ounce) can chopped roasted green chiles
1 cup chopped tomato (about 2 tomatoes)
4 tablespoons mayonnaise
½ teaspoon granulated garlic
 ½ teaspoon Tabasco sauce
Purée avocado and lemon juice.  Combine with remaining ingredients, cover and chill for 1 hour. 
Spicy Black Bean Dip

1 (15-ounce) can black beans, drained
2 tablespoons lime juice
3 tablespoons olive oil
1 chipotle pepper in adobo sauce
½ teaspoon minced garlic
Combine all ingredients in a food processor and purée.  Can be served immediately or stored, covered, in the refrigerator.
Lime Cilantro Salsa
I think there are even more flavors of salsa than there are guacamole!  I don’t mind the mango or peach or pineapple flavors but I really like the lime and cilantro combination.

2 large ripe tomatoes, diced
¼ cup minced red onion
¼ cup finely chopped cilantro
1 jalapeno, minced
½ teaspoon minced garlic
2 tablespoons lime juice
Dash salt
Combine all ingredients and serve immediately or store, covered, in the refrigerator.
