Split pea soup with smoked turkey

A heartier version of a classic soup.

SPLIT PEA SOUP WITH SMOKED TURKEY
¼ cup olive oil2 onions, chopped4 carrots, peeled and chopped4 stalks celery, chopped2 teaspoons minced garlic3 (32 ounce) boxes Imagine No-Chicken Broth or Regular Chicken Broth2 cups green split peas1 (1-1/2 pound) piece of smoked turkey, cut into small chunks1 teaspoon pepper
1. In a large stockpot heat oil and add the onions, carrots, celery and garlic. Sauté for about 5 minutes.
2. Add remaining ingredients and bring to a boil. Reduce heat and simmer until soup thickens, about 1-1/2 hours.
*Variation: Add 2 more cups of broth and 1 cup of barley before simmering.
