Chocolate hearts

Make these pralines for Valentine’s Day.

Makes 25 to 40 (depending on the size of the molds)
✔ 185 gr. (¾ brick) raw chocolate paste
✔ 65 gr. (¼ brick) raw chocolate butter
✔ 60 gr. dried candied apricots
✔ 60 gr. dried golden berries (also known as love berries)
For the garnish:
✔ Crushed cocoa nibs
✔ Golden berries
Cup up the cocoa butter and paste and place in a double boiler. Heat until they begin to melt. Remove from heat to avoid overheating. Continue mixing until completely melted.
Meanwhile, chop the apricots and golden berries as finely as possible.
Add the chopped fruit to the chocolate mixture. Mix and pour into heartshaped silicone molds (available at most supermarkets).
Refrigerate for 2 to 3 hours until set and hard. Remove from the molds and garnish.
The pralines must be kept in the refrigerator.
