1 onion, chopped 4 tablespoons butter1 (29 ounce) can stewed tomatoes6 cups grated Cheddar cheese1 (7 ounce) can diced green chiles Chili powder or hot sauce (optional)Sliced jalapenos (optional)Tortilla chipsSauté the onions in butter until translucent. Add the tomatoes and simmer until mixture thickens (about 15 minutes). Add the cheese and stir until it melts. Stir in the chopped chiles. Add chili powder or hot sauce if desired. Garnish with jalapenos. Serve with tortilla chips for dipping.Mexican Pizza 1 large store-bought pizza crust1 (15 ounce) can black beans, drained1 (15 ounce) can corn, drained 1 (15 ounce) can diced tomatoes, drained wellFeel free to add olive rings (black or green), jalapeno slices, red peppers or any other toppings you like!2 teaspoons chili powder1 cup grated pizza or mozzarella cheesePreheat oven to 450 degrees. Place crust in a pizza pan. Mix together beans, corn, tomatoes and chili powder and any other toppings you desire. Spread over crust. Top with cheese. Bake for 10 to 15 minutes until cheese begins to brown (we like the cheese well done in our house!)Chiles RellenosThis is really delicious but a rare treat out of consideration for our arteries!4 cups grated Cheddar cheese4 cups grated Monterey Jack cheese1 (7 ounce) can green chiles, sliced open and lying flat½ cup milk4 eggs2 tablespoons flourSalt and pepper to tastePreheat oven to 350 degrees. Grease a 9 x 13-inch pan. Spread chiles out and sprinkle with cheeses. Whisk together milk, eggs, flour and salt and pepper and pour over mixture in pan.
