Chile Peppers with Cheese
(or Chile con Queso if you want to sound authentic)
1 onion, chopped
Chile Conqueso
Chile Conqueso
4 tablespoons butter
1 (29 ounce) can stewed tomatoes
6 cups grated Cheddar cheese
1 (7 ounce) can diced green chiles
Chili powder or hot sauce (optional)
Sliced jalapenos (optional)
Tortilla chips
Sauté the onions in butter until translucent.  Add the tomatoes and simmer until mixture thickens (about 15 minutes).  Add the cheese and stir until it melts.  Stir in the chopped chiles.  Add chili powder or hot sauce if desired. Garnish with jalapenos. Serve with tortilla chips for dipping.
