On Monday, December 21, the Wadi Attir Project invites you to an extraordinary culinary experience, where Italy and the Negev meet in a single kitchen. Chef Stefano, Italy’s culinary ambassador in Israel, and Khaled Abu Siam, director of the project’s visitor center, create an evening where flavors, traditions, and people come together in remarkable harmony.
The evening begins where a connection to the traditional world meets modern creativity. The Wadi Attir Project operates with a deep connection to the land and local tradition, offering a variety of authentic products: Fresh Bedouin cheeses, locally sourced olive oil, olives, za’atar, and desert aromas that invite the palate on a unique journey. Every ingredient tells a story about Bedouin culture and the desert environment, and this evening gives them a voice in the kitchen.
What will be on the plate?
The dishes created in the workshop are an exceptional combination of Italian tradition and local flavors: Italian-Bedouin Focaccia – airy Italian dough with Genoese pesto, Wadi Attir cheeses, olives, and desert honey; Tricolor Pizza – fresh tomato sauce, mozzarella fresca, local labaneh, fresh za’atar, and local olives; Sweet Negev Dessert: Italian dough combined with samne, cheeses, katayef, and pistachio paste – a blend of European sweetness and local flavors.
Each dish is not just a taste, but an experience – from the touch of the ingredients, through the desert scents, to the enticing colors that reach the plate.
Chef Stefano brings his experience and love for the authenticity of Italian cuisine, while Khaled adds local knowledge and the cultural story that accompanies each ingredient.
