A gourmet salad that will only take you ten minutes.
By GOURMETKOSHERCOOKING.COMSpinach(photo credit: Courtesy)SWEET SPINACH SALADDressing1 teaspoon celery seeds1 teaspoon salt1 teaspoon dry mustard½ teaspoon paprika½ cup sugar1 teaspoon grated onion¼ cup plus 2 tablespoons apple cider vinegar2 tablespoons raspberry vinegar (or red wine vinegar)2 teaspoons fresh orange juice1 teaspoon fresh lemon juice¾ cup vegetable or canola oilMix all ingredients together except the oil. Add oil slowly in a stream, whisking until the dressing becomes thick.Salad2 bags baby spinach2 (11 oz) can mandarin orange segments, drainedor other fruit like ripe persimmon½ cup raisins½ red onion, sliced thin½ cup almonds or pecans, toasted (or use honey glazed nuts)¼ cup baco’s (optional)Mix salad ingredients together. Toss with dressing and serve.
