Cooking with JPost: Roast chicken like a pro

Chef Yochanan Lambiase shows you how to make what he calls "the most perfect roasted chicken you'll ever see."

Chef Yochanan Lambiase shows you how to roast your chicken to perfection.
What you'll need:
  • A whole chicken (1.5-2 kg)
  • 1 tbsp olive oil
  • 1 clove of garlic, crushed
  • 1 tsp fresh basil
  • 1 tsp fresh thyme
  • 1 tsp lemon juice
Step 1:

Mix the spices, herbs and juices together. Lift up the skin of the chicken and spoon the mixture in between the skin and the flesh. Do this on both the breast and the thighs.

Massage the flavor into the chicken to even it out. Then wipe down excess moisture on the skin in order to get that crispy, golden texture at the end. The flavors inside "cause a sort of steaming effect," says Chef Lambiase.
Step 3: Time for a roast

Cook the chicken in the oven on 450 degrees Fahrenheit for 50 minutes.
Stick a fork in it, it's done!
Extra tip:
To double check that your chicken is roasted to perfection, stick a fork in one of the thighs. If the juices run clear (i.e no blood), then it's ready.
