By GOURMETKOSHERCOOKING.COMDOUBLE GINGER COOKIES1-1/2 cups flour1 cup whole wheat flour¾ cup chopped crystallized ginger1 teaspoon baking powder½ teaspoon baking soda½ teaspoon ginger1 cup sugar½ cup applesauce¼ cup oil½ teaspoon vanilla1. Combine all dry ingredients. Make a well in center. Whisk together sugar, applesauce, oil and vanilla. Add to flour mixture and stir until just moistened.2. Cover and chill for 1 hour. Preheat oven to 350 degrees. Shape dough into balls and roll in sugar.3. Place on lightly greased cookie sheets and bake for 15 minutes. Let set for 1 to 2 minutes on pan; then remove to wire racks to finish cooling.
