DOUBLE GINGER COOKIES

1-1/2 cups flour
1 cup whole wheat flour
¾ cup chopped crystallized ginger
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon ginger
1 cup sugar
½ cup applesauce
¼ cup oil
½ teaspoon vanilla

1. Combine all dry ingredients. Make a well in center. Whisk together sugar, applesauce, oil and vanilla. Add to flour mixture and stir until just moistened.

2. Cover and chill for 1 hour. Preheat oven to 350 degrees. Shape dough into balls and roll in sugar.

3. Place on lightly greased cookie sheets and bake for 15 minutes. Let set for 1 to 2 minutes on pan; then remove to wire racks to finish cooling.
