There was a time in my life when almost every holiday we would celebrate in Tiberias with the extended family, with a little stopover in Kfar Tavor, one of the charming places in the country if you ask me.

These days, 25 years ago to be more precise, one of my favorite wineries stood there too, Tabor Winery. So why not stop there for the upcoming Passover for four cups?

Fun wines that can suit every palate

In recent years, the winery underwent a sort of revolution when it decided to adopt an ecological agenda, turning all its vineyards from the north of the country to the Negev, into ecological and nature-friendly ones with a perfect connection between the vineyards and the type of soil they grow in.

Bottom line, Tabor Winery has fun wines that can suit every palate, starting from "holiday drinkers" for those who like something light "so our heads won't spin," and up to wine enthusiasts who understand and prefer more complex deep wines.

First Glass: Tabor, Adama, Chenin Blanc 2022

I dedicate the first glass to this wine made from vineyards in the Negev, and bottled in a special edition for the upcoming Passover.

Chenin Blanc is a delicate and nurturing variety that almost everyone who tastes it agrees with me that it is the king of spring. It has a refined acidity, lemony, and is devoid of the "wood" taste, so it is suitable for everyone. Including its price. Price: NIS 60.

Second Glass: Tabor, Adama, Rosé Barbera 2022

I dedicate the second glass to the Rosé inspired by the blooming and spring, Rosé Barbera 2022, from the Adama series. A wine suitable for first courses plus and starts to challenge the palate gently.

On one hand, it is a delicate Rosé, on the other hand, it is a Barbera, which makes it a winning Rosé in my eyes. It is mineral, very fruity, and delicately balanced. What I love about it is that it's not too acidic. The second glass whets the appetite. Price: NIS 60.

Third Glass: Tabor, ECO White

The third and fourth glasses overlap the meal itself, and if you ask me, here there is a need for culinary and interesting wines. Instead of hesitating, I went for two options: one for those who prefer white wines, and the other for those, like me, diving deep into red at this stage.

The first wine is the white from the ECO series, a blend of Chardonnay, Viognier, and Roussanne. A Mediterranean, culinary, interesting, and complex wine that fits with all dishes of all testimonies, but will be perfect alongside anything related to fish. Price: NIS 85.

Fourth Glass: Tabor, Single Vineyard, Marselan For those who prefer red wine at this stage, my proposal is Marselan from the 'Single Vineyard' series. A Mediterranean variety made from grapes from vineyards in the Judean Hills.

This wine has aromas of spices that go great with complex dishes and cooking, it is aromatic and powerful but not too aggressive.

It also suits the stage where, after finishing eating, you look for something enveloping and indulgent to sip on the couch. Price: NIS 85.
