Everyone loves chocolate (except for some strange creatures who were clearly hatched, not born!)  And everyone loves chocolate in the form of brownies (except for…but I already mentioned that!)  There are great brownies from scratch and some really good ones from mixes.  When I just want a pure brownie, I like the made-from-scratch variety.  When I’m going to doctor it up with all sorts of mix-ins, then the mixes work perfectly.  Here are some of my favorite recipes for the purist.  Stay tuned for the brownies from mixes…
Giant Brownies BrowniesBrownies
-2 cups margarine
-4 cups semisweet chocolate chips
-1 cup flour
-1 tablespoon baking powder
-6 eggs
-2-1/2 cups sugar
-2 tablespoons vanilla
-2 tablespoons brewed espresso
-1 cup semisweet chocolate chips
-1 cup chopped toasted walnuts (optional)

Preheat oven to 350 degrees F.  Melt the margarine and chocolate in a microwave and stir until smooth.  Beat the eggs and sugar together.  Add the vanilla and espresso and continue beating.  Add the flour and baking powder and then beat in the melted chocolate mixture.  Stir in the chocolate chips and walnuts, if suing.  Pour into greased 9 x 13-inch pan and bake for about 1 hour.  Let cool completely on wire rack.  Cut into 12 large rectangles (or just serve as regular brownies and cut into smaller pieces!)

-1 cup chopped toasted walnuts (optional)
Preheat oven to 325 degrees. Lightly grease a 9 x 12-inch pan.  Place margarine and chocolate in a small saucepan over a very low heat.  Cook; stirring until chocolate has melted.  Turn off heat and stir until smooth.  Cool to room temperature.
Stir in sugar.  Beat eggs and stir in quickly one at a time.  Add vanilla and then flour until just combined. Stir in nuts, if using.  Pour into prepared pan and bake for 25 to 30 minutes.  Cool in pan and cut into bars.  Freezes well.
